Ponzu (ポ ン 酢) is a citrus-based sauce commonly used in Japanese cuisine. It is tart, with a fine, watery consistency and a dark brown color. Ponzu shōyu or ponzu jōyu (ポ ン 酢 醤 油) is a ponzu sauce with the addition of soy sauce (shōyu), and the mixed product is widely referred to as simply ponzu.

Normally, the juice of one of the Japanese citrus fruits is added to the sauce which is produced from soy sauce, rice wine, rice vinegar, bonito flakes and seaweed. The Yuzu Ponzu sauce that I use for the production of the pearls is vegan because I do not add bonito flakes. I decided to make a “different” Yuzu Ponzu because of the nature of the pearls. These pearls combine the 5 basic tastes – they are salty from soy sauce, bitter and sour from yuzu, sweet from sake, and contain umami. Try them with

  • fiish and seafood
  • sushis and sashimis
  • poultry or meat, or beef tartar
  • Asian dishes
  • poké bowls
